Health Benefits
Raw unfiltered honey preserves natural particles, flavors, and aromas. Raw honey may appear cloudy or contain visible particles, which are natural components of the honeycomb. Immune-boosting nutrients such as vitamins, minerals, enzymes, and antioxidants are preserved in raw honey. It contains antioxidants, such as flavonoids and phenolic compounds, which guard against oxidative stress and body cell damage caused by free radicals. Its soothing properties are beneficial for sore throat. Its lower GI value prevents spikes in blood sugar levels, which occur when having sugar.
That said, honey is high in natural sugars, so it should be consumed in moderation. Infants under 12 months should not be fed honey. It could be harmful for people with bee pollen allergies.
Storage Instructions
Raw honey has an extremely long shelf life because of its natural properties. It has an indefinite shelf life if it is stored away from direct sunlight and moisture, in an airtight container, at room temperature. In ancient Egyptian tombs, archaeologists discovered jars of honey that were thousands of years old and still perfectly safe to consume.
Raw honey may crystallize more quickly than filtered honey due to the presence of pollen and other natural elements, but this does not affect its quality or safety. Crystallization is a natural process when the sugar in honey forms solid crystals, resulting in a thicker texture. However, this does not mean loss of quality. To restore the liquid state, you can gently warm the honey jar in a warm water bath, ensuring the temperature is not too hot to avoid damaging its beneficial enzymes and nutrients.
